I was wondering what size fins most people are riding in the gorge. I have a 125 length twin tip board and currently 1.5" fins. I notice most people's fins are much larger. I assume larger fins help with swell/chop?? and that the smaller fins are better for flat water??

I think its mostly a preference thing, but generally I think bigger fins do help in chop.

I'm a big fan of smaller fins, 1"-1.25 ... less drag and I like being able to spin the board around on the water easily.
