So much fun yesterday! Thanks for letting me thrash around. I'll have to work on my poop stance. FOILFACE!

Design question. Why is the vertical "post" so long/tall on all of the foils. Seems like if it was shorter then you wouldn't be riding 2 feet above the water. Seems like a shorter "post" would keep you closer to the water and have more control. Never ridden a foil but am interested in the sudden popularity of them. And am more curious about versions 2.0 in the years to come.

I'm by no means a pro as is evident from the photo above. My first time out I went out on the shorter mast beginner set up that Stringy made and it was MUCH easier. The shorter mast comes out of the water quicker however which makes it more difficult when the chop gets bigger than a foot or so. ie. the foil is under water at the top of the swell and then pops out in the trough.
So, from my very limited experience (2 days) your assumption seems correct. I'm sure there will be more experienced voices chiming in here.

I see some of the racers using a seat harness when racing foils? Many the local foil riders also have been using a seat harness. I kept my Fusion for future foil riding.

This begs the question: “What other changes or adaptations to the conventional kites, harnesses, bars or control systems will be likely to follow the ‘foil trend’?”
For instance, will that “depower rope”, that the race board kiters constantly jerked on, be part of the “new age foil racing”? How about getting rid of the “hook and loop” connection system, in favor of a “shackled” system? Will the inflatable kite bow down to the “ram air” (foil) kite? Special footware? New kite control safety systems? Apres Foil Furry boots and Hipster kite pants?

What non-foil riders see when you are jumping....

That's Awesome! A little blood dripping and a severed head would make it pop a little more.
This could be part of the PSA on the dangers if Foilboards.

Fromm "Rescue Ron" to "Ron the Ruthless".
I know most of us are joking here but there is really no reason to fear the foil. Foiling is rad and I'm sure there will be haters but when it comes down to it, we're all dorks out there. Some of us just a little more so than others (self deprecation intended).
